- 100 g açúcar cristal

- 65 g grãos de café (usei Fazenda Pessegueiro)
- 3 gemas gemas
- 0.25 teaspoon extrato de baunilha
- 0.5 g sal refinado (pitada)
- 3-4 g grãos de café ralados ou processados bem finos + para decorar
Instructions
- Combine leite, açúcar, café, sal e 25g de creme de leite em uma panela. Aqueça até começar a formar bolhas, sem ferver. Tampe e reserve por 1 hora.
- Coloque o restante do creme de leite em uma tigela com uma peneira por cima. Reserve.
- Reaqueça a infusão de café. Misture cerca de 1/3 do líquido às gemas, mexa bem. Volte à panela e cozinhe até engrossar.
- Coe a mistura de café, pressionando os grãos para extrair o máximo de líquido.
- Adicione a baunilha e os grãos de café ralados. Misture bem.
