Dough

  • 120 g milk desnatado (morno)
  • 5 g fermento biológico seco instantâneo
  • 150 g farinha de trigo
  • 2 g açúcar cristal
  • 100 g ovo (cerca de 2 unidades, por peso é ideal)
  • 15 g gema (cerca de 1 unidade, por peso é ideal)
  • 100 g leite desnatado (morno)
  • 20 g glicose líquida (transparente)
  • 5 g fermento biológico seco instantâneo
  • 415 g farinha de trigo (+ para sovar, se necessário)
  • 125 g açúcar cristal
  • 100 g manteiga sem sal (ponto de pomada; + 20g para untar + 30g para assar)
  • 10 g sal refinado
  • 10 g raspas de laranja (tipo pera ou lima; cerca de 2 laranjas)
  • 5 g raspas de limão siciliano (cerca de 1 limão)
  • 5 g raspas de tangerina (cerca de 1 mexerica ou tangerina)
  • 20 mL extrato de baunilha
  • 1 gema pincelar
  • 10 mL água (pincelar)
  • 150 g uva-passa escura
  • 150 g uva-passa branca
  • 150 g damasco seco (picado)
  • 75 g casca de laranja cristalizada
  • 2 unidades laranjas (suco, para hidratar)
  • 1 unidade tangerina (suco das tangerinas, para hidratar)

Instructions 

  • Combine warm milk, yeast, and a small amount of flour; let activate.
  • Add remaining ingredients and knead until smooth.

  • Allow dough to rise until doubled in size.
  • Shape into a panettone mold and let rise again.
  • Bake at 180°C (356°F) for about 60 minutes or until golden.
  • Pincel with egg wash and water before baking for a shiny crust.
